As an experiment I bought the $5.99 family pack of Mexican mixed cheese at HEB and had my teenagers make queso just reading the first page of this thread. Easy, cheap, and better than restaurant queso.
Has anyone had success finding sodium citrate in the store? If so, where?
Have not found it at the standard grocery stores. I recommend buying online.

If you add some chili to your sodium citrate queso does it mess up the consistency of the cheese?
I have added taco meat, but made sure the beef was super lean and strained it before adding it to the queso. It's really good!

Smoking/grilling meat is natural to me.
