I got to do a tour here as part of our barrel pick a couple years ago. Amazing pick and staff experience, treated us like VIPs.
But it was the tour that kind of "exposed" why their juice is so hard to drink and harsh. Barrels are just left outside, scorching in the sun. They don't have enough room to house all their barrels. When we got to the distillery portion, it wasn't as "controlled" as you might see in another distillery. It was open air at that time and the uncovered tanks could receive some FOD from the wind and whatever is in the air. I asked about that and they said "we pride ourselves on our whiskey tasting like Texas". After talking to the guide it seems like they are happy being a 2 year old whiskey type of distillery at the moment.
The craziest thing is that we had their "white dog mash" and it was incredible, buttery popcorn. Who knows what could be with another distillery process…
