bookmakers aren't going to hang themselves by worrying about what ESPN or pundits say. If they did, they would get hammered by the sharps.

If they set the number at A&M -3, its because that is what they think it is. If the "real number" would be -7 for "anyone but texas" they would get absolutely crushed by syndicates betting -3.

That's not exactly true. Bookmakers don't set odds by the expected outcome, they set odds by the perceived expected outcome. Where the game should end up statistically is not as important as where bettors think it will end up because that is what drives their betting and where money is laid. Sharps may be able to make a ton of money on bad lines, but bookmakers don't care about sharps making money if there's a boatload of suckers on the other side funding it. It's all about having even money on both sides to guarantee the house profits no matter what.
