I used to love the catfish at Chuck's in Temple. And I grant that my taster if off due to being sick. That said I went yesterday and ordered my usual and it was totally different. So salty I could barely eat it. I brought it home and took off the coating and the fish itself was that salty. And instead of the cornmeal coatiing, it had some sort of hard batter with big hard crumbs. Not the same recipe at all. The catfish at Dead Fish is good, but it is batter fried.
I want some like the old Catfish King with the light cornmeal coating. Any suggestions of a new place to try?
