well Jim didn't cause them to lose the BBQ community, that I'm pretty sure. He definitely has unique recipes, though, but before he went to Dozier's and he was doing some freelance stuff I bought briskets from him for parties twice and they were always thinly sliced, never in chunks. That's surprising to read.

Yeah Jim responded saying he only cut the brisket into chunks when a customer asked for the burnt ends. Weird.

If they had kept with the traditional recipes , they'd still be in business. It's pretty damn hard to kill a bbq place in a town like fulshear is now. But the latest owners managed it. That takes a huge bag of f-s that aren't given.

I grew up right by it and in junior and high school we all would half joke about how we couldnt wait until we were old enough to go there and play. Then it burnt down while we were all in college so we never got to come home from break and check it out.
