Hello 2022! Instapot method worked. Although I forgot to add the ham until it was done in the pressure cooker. Felt like it could have used a little more salt, but it could be because I left the ham out.

I'm subbing low sodium Tony Chachere for salt this year. Just added all the ingredients except ham tomatoes and sausage. Smells like a 2022 blowout.

Is it possible to soak the peas too long? What's the longest they can soak before cooking? Trying to decide if I want to soak them tonight or just use the instant pot method tomorrow. Probably won't be able to start cooking until late morning or early afternoon.

We normally do overnight and then do lunch. They soak for a good 15 hours.

Beans are in the pot soaking at our casa. 10 people will be enjoying tomorrow including my fam.

I did a fast soak today. Put the water and beans in the pot and bring the water to a boil. Turn the heat off, cover, and soak for an hour. Drain and rinse. You're good to go.

Didn't think to get a picture of the finished product in the pot, but here it is over rice. Delicious. And have enough leftover for two more meals for the family.

I make collard greens in a similar fashion so did them both in different pots. Mixed them together in my bowl to eat and it was pretty darn good.

These are boiling now. Added a small co trainer of chicken bone broth for a small layer of complexity, and simmering open cover to steam off some volume.

Thanks for this recipe. Made a batch this weekend and it turned out great. The hardest part was finding the peas. Struck out at 3 places with empty shelves of dry beans, and thankfully found some fresh ones in the produce section.

Added some cajun seasoning in place of the cajun tomatoes.

I made 2 batches for New Years. I have my neighbors hooked, so I cook for the neighborhood each year now. It's a great tradition! A great recipe.
