IMO, Railhead has good ribs and great smoked turkey. But their fries with onions are fantastic.

For brisket in Fort Worth Angelos or Railhead. For ribs Sammies on Belknap...have been going there since I was in diapers, sauce is to die for! Texas Toast and their sauce is a meal in itself!!!

The key is to get south of 30 or 20.

Odom's and Hardeman's (same general family, sides are slightly different, but they all learned meat from the same person) are really good. Crown's 9probably about the oldest bbq joint in DFW) in Grand Prairie has some really good brisket (and smoked baloney), just don't look in the kitchen, look at the structural integrity of the building, or general food handling practices.

I like the tiny place in downtown FW too, but can't remember the name.

I'm not really a fan of any of the Hill Country transplants. Too expensive for my liking for a name, when there is much cheaper local options.

Bailey's is the little joint in Downtown FW. I've only ever had a sandwich there and if memory serves me they only do sammiches and chips so no plates.

It's not bad at all but I find it hard to judge BBQ joints on sammiches.

EDIT - Part of what makes Bailey's good is the character but it doesn't mean their meat is better than anywhere else. It's pretty awesome to be sitting in a shack in Downtown Fort Worth eating a BBQ sandwich amongst tall buildings because the owner never sold out.

swung by off the bone for dinner tonight. Pretty damn good cue.

sausage was great and the brisket was top notch. Chicken was a little dry but good flavor-wise.

I don't agree. I do believe it is all about timing though. We've had a few bad cuts of meat before but it hasn't been the norm. I've been to most of the places mentioned so far as well. I think part of the problem hard8 has is the volume they handle. It is hard to be consistent on that scale.

I agree on railhead, but angelo's is good but overpriced.

My problem with Hard 8 was the sauce, not that its the most important thing. The meat was decent.

Hince - driving by, they do look like they're open. However, I called yesterday and they said the city made them resubmit some plans so I assume they are having permit issues. She said they are ready to open but couldn't give a date when that would be.

I'll agree with that. It's a really cool place, good atmosphere and I really WANT to love it, but when my favorite thing always winds up being the blackberry cobbler, I leave disappointed every time.

I really miss getting to swing by Louie Mueller once a week and even The Salt Lick. I don't think atmosphere up here has anything to do with good bbq... I've smoked some MEAN briskets in my backyard with oak lump charcoal and pecan or mesquite chunks. I think it's more to do with differences in culture.

Also, forgot to add Clark's in Tioga. Little hole in the wall beer joint that is quite the drive depending on where you are located (only about 40 min from me in Little Elm). They smoke brisket for 24 hrs with no seasoning and it's pretty darn good. Their pies are to die for. Good sides and ample-flowing beer, although you have to join their "club" to drink.

I just ate at Soulman's BBQ off 183 and Regal yesterday. It's was pretty good. Little pricy though at $10.99 for a two meat plate but it was good portions. The ribs were a bit overcooked.

When judging BBQ, I also look for the crowd. I got to Soulman's right before the lunch crowd hit and I was glad I did. That place filled up quick.

I think everyone on this board can agree that Dickey's is terrible. And if you love the "do you own sides" thing, try Spring Creek BBQ.

I'll give another nod to Peggy Sue's, as well -- great chopped beef sandwiches and onion rings.

The original Sonny Bryan's is still money ... haven't been back post-fire, though.

And, as has been pointed out, Eddie Dean's is awesome (plus, he's an Ag).

Other than that, there's not a lot to be wowed by, I don't think. A friend is obsessed with the ribeye at Hard 8, so I may pop over and try that one day, but their meats are almost over-smoked for my taste.

I second Odom's on the south side of town. That place and Smokey Johns are the best I've had on this side of the world.

Hit up Hardeman's yesterday (Odoms cousin), great ribs. There is actually a third Odoms down in Waxahachie (was in Cedar Hill). If you haven't tried Odoms or Hardeman's, I highly suggest it. If you can tolerate the atmosphere (very ghetto area), Crown's is pretty good. Just get a drink in a can, don't order the tea.
