Not expecting everyone to agree, but my kids wife and I all loved The Texan dried sausage links they sold by the counters up until about 3 years ago. Then they changed the recipe to something more shelf stable (and vacuum sealed) and I hate it.

Was very disappointed when they made that change.

I have some of both from a 2021 deer (sort of forgot about it in the bottom of a chest freezer) and ate some of the summer sausage a few weeks ago. It had a little mold on the casing but I wiped it down and it was fine.

I definitely would have stopped at mold.

Anything questionable goes to my FIL who will eat anything or feed it to the dogs.
