I got for about 2.50 a pound at walmart last Thursday in FW.
Did a quick smoke Saturday (8.5 hours). I was terribly disappointed but the family told me to stop being dumb and that it was good. Not sure if it was the meat, or if my quick smoke got to hot at one point. Thinnest side had to be sliced reallly thin.

The only time I've ever done a brisket, I thought it was awful but everyone told me it was good. Can't help but think they're just trying to make you feel better. I wanted to tell them, "it's ok guys, I can take it"
Entirely possible. Only stuck thermometer in point and it read 193. Pulled it, but only let it rest 10 minutes or so. Might have been in the direct center in the fatty layer. Have done plenty of quick smokes before and never had that issue though. Using an old weber with reticulated sides and two coal baskets on either side of the meat.agfan2013 said:lotsofhp said:The Shank Ag said:

The reality for both of y'all is that the brisket is likely somewhere in the middle. We are our own worst critics and it probably isn't that bad, but friends and family do tend to be way too nice and not want to say something bad. Makes it hard to get honest feedback sometimes.
If the flat had to be sliced really thin because it was too tough you likely undercooked it. Needed more heat to render the fat and relax the muscle more.

That's like getting a case of shells for the price of a box.
