I have no personal experience with ceramic or pellet, although I know others that love them both. Only down side to pellet is that you can't fire grill on it... if there are options now that has that feature, that would be great!
I do have experience cooking briskets on both an electric smoker and a gas smoker. While the electric is really easy, and the finished product looks great with good bark, etc, it will never have a smoke ring and never quite tastes as good as a real smoked brisket. The gas on the other hand produced a great brisket. Great bark, great smoke ring, great smoke flavor, just as good as a real pit smoked brisket. The gas was slightly more of s pain because to cook at a lower temp, it wasn't enough heat to make the chips smoke, so I had to constantly play with the temp. I am sure there are newer models that makes that easiest.
my electric does make great easy to make jerky though. Anyway, just my 2 cents.
