Good Eats Grill used to be in DFW and had great chickfried steak. I think now they are just in Houston.

Babe Chicken Dinner is the best I've found lately.

My tip for any CFS at a restaurant is to always order with the gravy on the side.

At BRC and Liberty Kitchen in Houston you can get CFS breaded in jalapeo potato chips. Awesome.

FWIW, I grew up in waco and left as soon as I got out of high school, hated the town and still do. I lived in DFW, CS, southern California and Austin. I did relocate from Lake Travis back to waco for 2-3 years in the 2000's to take care of my Mom before she died. I lived in Belton after that for 10 years until taking early retirement and moving here.

Irish Man is a good guy, we swapped comments here and there. And I am happy he has McGregor address, it seems like a good small town.

In Round Rock, Krack of Dawn Donuts off University. Place is so legit for fish and grits and chicken fried steak. Sounds odd but go.

Sodalacks and the Longhorn in B/CS area have good CFS. Longhorn even has a "spicy CFS" which is cheese melted with tobasco sauce instead of regular gravy.
Green Chile Willies, south of Amarillo, has a green chile gravy option for CFS. Pretty good.

That does sound good, I'll have to check it out if I'm ever in the area.

If we're naming favorite places, T-Bone Tom's in Kemah is one of my favorites for CFS. Good gravy, too.

Their fried fish and dirty grits is the best plate of food I've ever had at a restaurant.

You double dip the cutlets. First dip cutlet in batter- egg/buttermilk mix (1 large egg and 2 cups buttermilk), then roll cutlet in mixture of 2 1/2 cups flour/2 cups corn flakes(slightly crushed)/salt & pepper, then repeat. Fry cutlets slowly and turn only once. Fry each side to a medium brown. By cooking slowly and turning only once, the batter stays on the cutlet. I prefer plenty of grease.

Cream gravy: in pan grease drippings and fried batter mixture from finished cutlets, flour to thicken(about 2/3 cup) brown to light brown color, add about a third of gal of milk. Cook at about 375 to thicken. Continue to stir, don't leave it or it can scorch. Salt and pepper to desired flavor. I prefer mashed potatoes or homemade biscuits with the gravy, but to each his own. No better dish in the South. Enjoy!

In the mid-nineties, my goto for CFS in B/CS was Tom's BBQ. It was a massive plate coverer, with good gravy. I miss Tom's!

In Waco, George's has a great CFS. Just ate it Saturday. Get the half order, if you only want one steak that covers 3/4 of your plate. The full order comes with 2 pieces that size, for under $12. May as well get a Big O, also.

Also, in B/CS, Sodolaks Beefmasters, off 21 east of 6, has a good quality CFS and also even better steaks.

Dip the tenderized cube steak, or venison in milk and egg and then seasoned flour. Keep it simple.

That's what I do.

Also, I mix in salt, pepper, and liberally any other spices I want into the flour (Tony Catchetore works well for more spicy). Get it well covered and place in shimmering oil in cast iron skillet.

I do the same thing for fried chicken: 5 minutes for each side, tun every minute for 5 minutes (for a total of 15 minutes). Rest on a grate (or raised surface...don't let it rest on papertowels, as the underside can become soggy).

Save the oil on low, mix in Wondra and milk until a slow bubble, then mix in more Wondra and milk, seasoning, etc. Repeat the process until you get the amount of gravy and taste you like.

The total time including prep is maybe 30 minutes.

In the mid-80's for a college student budget, the Cow Hop CFS sandwich and gravy on the fries was hard to beat. Have a pig-out after and you'd be sure to take a good nap in class.

P.s. It's unbelievable that Tom's is no longer.

Yeah, for us really old farts, Youngbloods Aggie Special was the plate-covering CFS. It was a real dive of a place, in the rock building that is now Carney's
