Dahlias in liberty hill. Chicken fried steak, mashed potatoes, fried okra with jalapeo cream gravy on top. Great desert menu. Great prices.

I have access to a tenderizer and made cutlets from an inside round.

I went flour-buttermilk/egg-HEB frying flour.

The frying flour is seasoned enough and we love using it.

I have a deep fryer and we have been doing that lately since it is easier. Then we just use McCormick country gravy packet for the gravy.

If I have more time, I would use the cast iron skillet and make brown gravy with onions.

WTF

Brown gravy on a chicken fried steak!!!!!!!!!!!!!
Brown gravy is for yankees
This. Prefer cream gravy over brown but gotta say that a good New Mexico green chili over CFS is pretty damn good.

I crack 2 eggs in a large bowl, add about a cup of milk and some maple syrup. Mix that up and soak meat in it. I crush a sleeve of saltines and mix with flour and add salt lick bbq rub and toss the meat in it and fry in veggie oil in a cast iron skillet. No complaints

I got some good options so turn it into a statewide thread.

Any more recipes would be welcome. My chicken recipe is similar to what's posted in some but I use 2/3 flour 1/3 Italian bread crumbs.

So plain flour then egg then mix above

Since you said Round Rock try Cotton Patch at 79/AW Grimes. Best chicken fried steak I've found locally.

Had it many times. Before this thread it was my third choice.decent but to my taste way too much salt, I've avoided salt for 40 years. I've suggested several times to the wait staff but no change.

Sooo... looking for better.

Agree on Cotton Patch. The breading consistency and meat are good, but the breading and gravy are saturated in salt.

A little trick to cream gravy I learned...

Add one or 2 chicken bouillon cubes to the milk and cream. It gives it a great flavor. And lots of pepper.

There's that salt creeping in...

All you need is butter, flour, milk, salt, and pepper

I use whipping cream. Not milk. And if you use one bouillon cube, it's not salty.

Sodalacks and the Longhorn in B/CS area have good CFS. Longhorn even has a "spicy CFS" which is cheese melted with tobasco sauce instead of regular gravy. Doesn't sound all that good when you first hear it, but I had it this last Friday for dinner and it's good.

If you are going state wide...I grew up in Zapata,TX and there is a restaurant called El Paraiso that had some fantastic CFS. It's South Texas so they served it with retried beans on the side, delicious!

If you happen to find yourself down there give it a try and also go find a place called Diana's or a place called The Hawks Landing (if still there) these places had the best fried chicken I've ever had in my life!

Damn I miss growing up right on Falcon Lake and the food down there!

Didn't realize you were from Chicago. Nothing wrong with that, it's a cool city. And, as far as Yankees, most I've met are OK and the cities up north I visited as well (except for Detroit).

I do find it ironic being from Chicago and living where you do now. As you may recall, I can't stand that place. But, to each his own I guess,...it's now been well over 2 years since I've been there. Two siblings still lives there, but one doesn't care for it that much either.

I no longer reside in Central Texas. Moved to the coast 8 months ago.

Edit for OP:
I think it changed ownership a few years ago, but the 290 Cafe in Manor used to have to really good CFS.
