I am by no means an expert on cooking buffalo, but I would imagine that you cook it just like lengua, a Mexican dish that is beef tongue.

My old college suitemate boiled the tongues he ate section by section in those little plastic ramen cookers...You could try that?

I like to slice it into 1/2" to 3/4" strips & season with salt & pepper, maybe a little rosemary if the wife is going to be eating some. Cook on a very hot skillet with some olive oil just a couple of minutes on each side.

Just kidding... never had it. But it'd probably eat ok like that.

When I was a kid my mom would cook beef tongue. Prepared it like a roast. Couldn't be much different that bison tongue.

4-5 garlic cloves
Small onion
Put in crock pot on low all day
Serve on corn tortillas with cilantro/onion/lime juice

Mule, that's what got me thinking about trying buffalo tongue in the first place. I thought it was the heart they ate raw though.

Growing up my dad would cook beef tongue. He'd boil the tongue and then skin it. Then he'd cut into slices and chicken fry.

Tongue is one of those things that can either be incredibly delicious, or completely inedible. The most important step is to remove the layer of skin (membrane) by boiling it. Once this is done, you can prepare it any way you want, and it will be good. Slow braise, fry or smoke. There's enough fat inside that boiling it doesn't rule out other cooking options once the skin has been removed.

I like the crock pot method described above, except I add a little cumin and a few jalepenos. Once it is tender, you can either shred it or slice it thin. I like to shred it, then quickly saute it with additional onions and peppers to be served on corn tortillas. It's one of my favorite cuts of meat.
