Thinking of cooking a couple fresh red snapper fillets for dinner and not sure how I want to cook them. Asking the all knowing outdoors board for their can't miss recipes. And go!

Lightly season with Tony's. Slap on a thin layer of mayo. Sprinkle with chopped pecans. Put on smoker til done. Thank me later.

Salt and pepper
Dust with flour
Pan fry in butter and/or olive oil, couple minutes per side

You can do this with fillets too, just reduce the cooking time. This can also be done on the grill; just be sure to cook with indirect heat so you don't catch the paper on fire. http://www.foodnetwork.com/recipes/alton-brown/red-snapper-en-papillote-recipe.html

Skin-on, fresh red snapper fillets
Skin side down, season fillets with salt/pepper/paprika
Lay several pieces thinly sliced lemon atop each fillet
Bake about 15 minutes at 425 until flaky white
Straight out of the oven, apply several spoonfuls of softened (not melted) butter mixed with garlic/lemon zest/fresh herbs of choice (highly recommend basil) - butter will melt down across fillets
Squeeze juice from lemon slices over fillets
Serve
Enjoy!


So simple, so freaking good. Easily top 5 seafood dish I've ever eaten - and that's saying a lot.

Pinch of Cayenne
Avocado

Lay the redfish down and sprinkle with salt/pepper/cayenne. Slice the remaining. Place slices of all ingredients except avocado ontop of Redfish and let sit for an hour. Remove slices. Place fish meat side down on grille. Cook for about 2-3 minutes. Flip scale side down and place all the slices of everything back on the fish. Cook for about 15 minutes. Remove, leave all slices on fish, garnish with avocado, and enjoy.

I put them on tin foil on the grill, marinate with olive oil and Cajun seasoning. Fish is so tender it's falling apart after a few minutes each side. Then I make tacos. I know it's simple but damn it's good
