Red meat is not a health risk, and apparently all the studies claiming it is were based on shoddy research:

Health effects associated with consumption of unprocessed red meat: a Burden of Proof study | Institute for Health Metrics and Evaluation

I'd also add, eat fatty red meat. If you're willing to cut processed carbs, none of this stuff is bad for you.

The research determined this was bad for you because most of the red meat eaters they were researching also smoked, drank, ate sweets, etc.

Early on in the pandemic I started eating NY Strips with raw spinach at least 4-5 times per week. Usually Chicken or Salmon for the other meals. The health benefits were tremendous.

Have also seen research indicating that cholesterol was good for your brain/brain tissue and potentially staving off Alzheimer's and dementia. And that unprocessed, but cholesterol rich foods were beneficial for this reason. Lower cholesterol levels can impair brain function.

I was just out of A&M in 1990 when I saw something on a Houston news station declaring that one of my favorite meals (fettucine alfredo) was essentially "heart attack on a plate". Obviously if one ate only fettucine alfredo every day every week every year, that would be a problem, but my bull**** meter went off at the story. Me eating a plate of this Italian dish on occasion is no more a problem than eating a steak every so often, or drinking a 44 oz Dr Pepper, or eating ice cream, or whatever else. It's when you consume something like that in excess.

I've distrusted the media ever since.

Raise beef for living. Went down rabbit hole on straight carnivore diet since July 1. Have lost 65 lbs and I'm the healthiest I've ever been.

I've been on carnivore for the last 2 years. Started at around 214 lbs at 6ft tall. I lost 33lbs before getting a bit lax and cheating more often. I also didn't not exercise at all when losing that weight. For the last 6 months i've added strength training, so have probably put on around 7lbs of muscle.

After about a year on carnivore, I had my bloodwork done and everything was in the green.

My only concern is the quality of the meat. I remember either watching a video or listening to a podcast with a carnivore doctor who said the ratio of of omega 3 to omega 6 fatty acids in grass fed meat is about 1:1, but with grain fed is about 6x the amount of omega 6 to omega 3. So, grass fed and finished beef is substantially better for you than grain fed, though the price is also much more.

Right now, HEB has prime beef and grass fed/finished beef at the same price for NY strips.

But after surgery and chemo rips your dignity to shreds in the last months of your life...You will have wished more green vegetables and less meats was an active part of your diet.
