Why would it be any more or less risky than cells grown in an actual chicken? From a biochemical standpoint. If it's the same proteins and fats your body will break it down the same way.

In all honesty, chickens are not very clean - the mountains of poop a chickenyard produces is just not inducive to the word "clean".
And, for those of you who have never had the pleasure of beheading a chicken followed by dousing it in boiling water so as to loosen the feathers, it stinks like you wouldn't believe.
Of course, I can understand those who distrust the corp/govt alliance that will no doubt try to produce lab grown meat at the greatest possible profit.

I can all but guarantee this will never be economical.

Lab grown building materials, like wood or leather, are much more likely to succeed than any form of lab grown meat for one reason: Contamination. The conditions necessary to grow the cells are ideal for any form of mold, bacteria, or virus, and they don't have the benefit of an immune system to keep it clean. I worked in biopharma manufacturing for 3 years, and the lengths we had to go to in order to prevent contamination of a batch are cost prohibitive to something like food.

is not chicken cooked because it is usually contaminated before cooking?

That's more of a question for Von Miller, but I do believe the way chicken. Is processed does lend itself to more contamination. Plus raw chicken is just nasty AF.

Processing of any animal leads to contamination no matter how hard plant operators try to prevent this. There are some processes that can lead to cross-carcass contamination but there are also procedures to limit and monitor this. I have no personal knowledge of Von's operation but I'd roll my dice on a large operation over a small one every day of the week and twice on Sundays. Large operations have more resources to effect good food safety practices and more oversight to incentivize following good food safety practices.

Check out this CDC page which lists Salmonella outbreaks by source. I think you'll be surprised at how often poultry is NOT the source.

Completely forgot to check back on this thread, sorry.

Contamination in meat most of the time happens on a surface level, and even then only after the chicken has been slaughtered. Growing this stuff in a lab setting requires sterility in order for the initial cells to not be killed off before they have a chance to grow into the final product.

Now, if they were just making what amounts to ground chicken pulp (think chicken nuggets) then they may be able to do that in a large scale stainless steel tank that can be sufficiently sterilized much less expensively than what we did for small batch single use. But they won't be able to do a specific cut of chicken. Or even a whole chicken.
