People in Europe use electric because they're forced to. Seem reason they have ****ty tiny bathrooms and crappy bare kitchens, minuscule appliances. It's not because they're better it's because socialism sucks.

A lot of steak houses use induction for searing. It's more efficient than gas and heats the pan to insane temperatures in seconds.

I have a gas cooktop at home and an electric one at our vacation rental in Surfside where gas isn't an option. Electric sucks plain and simple. I'm not giving up my gas, ever.

This isn't even an externality that harms uninvolved 3rd parties (like say pollution or 2nd hand smoke).

From the article, which mentions using gas as well by the top chefs:

"As a result, induction hobs are seen as a useful and accessible piece of kit for the ambitious chef with limited money and space."

Well if you're poor and have no space those sound like advantages. Like I said, keep googling, maybe I'll check back. But do better this time than a theme restaurant and a "currently closed" wine bar without space for a real kitchen.

I cook just fine on either. I prefer electric because I can use the cooktop for food prep as extra counter space. I keep my gas outside at the grill. I've had both on demand gas and traditional gas water heaters. On demand doesn't work when the power goes out.

I am surprised that more people don't blow up their houses with gas. It's interesting to see what will happen if/when hydrogen starts getting piped to homes. This will happen first in Europe.
