Just got done watching Gladiator. I love the final 30 seconds or so of that movie. The pan up to the Rome skyline with the Hans Zimmer & Lisa Gerrard music playing, fade to black, roll credits. I've always loved it. Just gives that feeling of "damn, that was a great movie."

Cast Away is a good one. I love an open ended ending like that.
I've never read the novella but there's no way the book could deliver an ending like the movie did.

The final 5 minutes of Fellowship of the Ring. From Frodo hearing Gandalf and jumping in the boat, to Sam and Frodo walking down the cliffs with Mordor in the background.

I always kinda liked the ending scene / narration in Legends of the Fall
Magnum walking into the fog/clouds while Higgins is ordering him to return.
The walk off in The Usual Suspects is tough to beat.
