If Rey heard the "myth" of Luke Skywalker - as she references in TFA - then the downfall of "the Emperor" or "Palpatine" or "Darth Sidious" was no doubt part of that myth. Whatever name he's commonly known by, the man responsible for the fall of the Republic and rise of the Empire, even if 30 years later, would still be commonly known, I'm sure. And even if not, Luke could have easily told Rey about him in an off-screen moment on Ahch-To.

I think Muck hit on an interesting point there that we as the audience know who he is by sight and sound, but none of our main characters do. He could conceivably come to them as some kind of mentor without revealing who he is, which isn't something I had originally considered.
