When I was a kid, my grandmother would fix tunafish sandwiches with the tuna slathered with miracle whip on Mrs. Baird's Bread and the oil only partly drained from the can. She would also cut the crusts off the bread. Always served with Dr. Pepper. I'm not sure who I have to thank for that soggy concoction, but I suspect that it was the only way one of my older siblings would eat. To this day, a tuna sandwich just doesn't taste right unless it's made with Miracle Whip and accompanied with Dr. Pepper.
I told that story to a job superintendent on a construction project once after he confessed that his grandmother would spread Miracle Whip (instead of butter) on the outside of his grilled cheese sandwich before she put it on the frying pan. He said that ever since, he cannot stand to eat a grilled cheese sandwich if it was prepared any other way.
I think the problem here may be grandmothers.....
Mayo in lieu of butter for grilled cheese is a thing for sure and becoming more of a thing I think. Thought it was crazy until I tried for myself. Tastes slightly better IMO but also gives a better crisp I think. Also, easier to work with and spread as I do not keep a butter dish. I mean, they are both just fats and oils at the end of the day. I won't make mine any other way either these days.
Worth a try if ya haven't!
