However, the original at Leon Springs is a whole level above the copies, and very good. Started going there at least 25 years ago. Funny how a copy of a copy of a copy fades out.

There's so much great barbecue in Texas that it's difficult to remember when chains like Luther's were successful. Rudy's was really the first to and the best at creating consistent, high quality barbecue across locations.

It depends on the cook. College Station is good most of the time. One time it was excellent. Went to the one in Colorado Sorings in August. The brisket and ribs were perfect. Went to the one in Waco last month. Brisket was average, ribs were perfect. Spring location is usually better than average.

I noticed they changed the sauce label. At the Leon Spring location, and that one only, the label used o say "For use before or after sex - not during".

Agree with this. I'm rarely going to be disappointed there, even though there is better out there.

I sgree with the takes here. I hrew up going to Dickeys and now find it a wasted opportunity. Id rather just have a hamburger. Rudy's is my litmus test as well.

Rudy's is consistently decent to good. I like the ribs and sausage best, brisket is okay (easy to get worse brisket than Rudy's, though).

I'm always okay going there.

Yes! I would love to get the recipe for it, but I've never found it anywhere.

ETA: Just found something online. I hadn't googled it a quite a while...

Ingredients


  • 2 cans Beef broth
  • 1 pounds Gemstone potatoes
  • 1 pounds Pork stew meat
  • 1 can Petite diced tomatoes
  • 1 can Green chiles (chopped)
  • 8 ounces Green chile salsa
  • 2 teaspoons Garlic (minced)
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • Onion (chopped)
  • Use cornstarch or potato flakes to thickenyour choice!
Instructions


  • Dice gemstone potatoes, boil until mostly done, then drain.
  • Simmer pork stew meat in beef broth with onions, garlic, and seasoning.
  • Add potatoes and the remaining ingredients to the pot.
  • Simmer for about 30 minutes.
  • Serve warm, topped with sour cream, cheese, or cilantro.

Notes

  • Try marinating the meat overnight for extra flavor.
  • Use different green chilies for more or less heat.

    Bill Miller has better sides than Rudy's, but yea I don't know anyone who actually gets their bbq.

    You haven't seen them slice the meat at Rudy's? All the ones I've been to have their slice stations right behind the counter.

    This. Not sure which Rudy's he's going to, but any I've been to have the cutting station right behind the registers, and they slice and weigh however much I ordered

    I will say this - they cut the meat in front of you at Dickeys and it's absolute ***** So if this dude's criteria for evaluating bbq is based at least in part on where they cut the meat, then his opinion is as quality as a dickeys sliced beef sandwich

    Try Heaven's Gate BBQ. When St. Peter asks you if you want their ribs or if you want to see Jesus, take the dang ribs. Plus Jesus loves their chicken.

    I like a Bill Miller's po' boy plus brisket sandwich, but I don't really consider it great barbecue. It's just a good sandwich.

    I miss Rudy's BBQ.

    But we do have CoMo Smoke and Fire, Big Daddys, and Trail Boss BBQ to get some resemblance of Texas BBQ.

    These needed to be said. Never understood why people hate on Rudy's. It's not too of the line, but still tasty Que and great comfort food. Trust me, when you live in the Midwest you'd kill for some Rudy's.

    This. I know the BBQ snobs think the only places worth going to require you to get in line by 8:00am, wait 2 hours, and pray for a chance to be blessed by the pitmaster before they run out. Truth is BBQ is not exactly rocket surgery. You get to the point where there's just a marginal difference between Rudy's other places.
