Queso goes to &$#@ when reheated

My queso (with sodium citrate, of course) is legendary in my family. I've noticed after reheating about the second time, it becomes like water. I'm not talking about separating, it still is smooth as silk, but watery. Could microwaving to reheat cause this?

Only thing I can figure is you're getting the cheese too hot, and you're making it meltier and less viscous, if that makes sense.

occasionally I have that happen. I just stir in a handful of pre-shredded cheese to thicken it back up.
