I've got a #12 grinder that came with 4.5mm and 10mm plates, plus a 'stuffer' plate. Every recipe I have tried seems to recommend a 'medium' plate.
What is a medium plate? The 10mm is large for most things on one pass, and still large on some things after 2 passes. And 2 passes are a pain in the butt. The 4.5mm seems impossibly small for most any purpose.
Should I buy an intermediate plate? And what size should I get?
