Houston Restaurants - bread made with European wheat

How long do you want to ignore this user?
My wife has to avoid gluten, not celiacs but another ailment, but noticed when we were in Switzerland the bread there was a lot easier on her. I've read that the wheat strain in Europe is different, has less gluten perhaps, but was looking for a restaurant in the Houston area that made bread from scratch using European wheat.

Any suggestions? A place that made gourmet hamburgers would be great!

How does she react to sourdough? Supposedly the fermentation of sourdough actually processes most of the gluten which irritates people with celiac disease.
