I've got all the kids tomorrow will mom is on a trip, and I wanted to try and make the Crazy Wings from George's for the game.

Has anyone made them before, and I'd love to know your process if so?

I was planning to mallet some chicken chunks, stuff with Monterrey Jack and jalapeños, roll up and wrap with bacon, and deep fry for 6-8 minutes

Any help would be greatly appreciated!

Not sure who George is or why Will is with your wife but good luck

I've never been to George's (assuming you're talking about the one in Waco based on my Google search) and I'm willing to bet many on the food board haven't either.

Based on the menu, it doesn't sound that difficult. Sounds like you have a good handle on it.

Curiosity got the best of me so I had to look them up as well.
Ahhhh, Chicken poppers.

I usually grill mine so it helps to Sous vide the bacon overnight. I also fireroast and peel the jalapeno. Since these are deep fried you can accomplish the same thing by dropping in the grease well ahead of time. It takes some of the grassy taste out if they are cooked a bit ahead of time. Volleyball wrap them so they are fully enclosed. I usually give the chicken an hour in teriyaki as well.

Shame on anyone on this board who hasn't been to George's. Crazy Wings and Big O's! Steak finger basket is fantastic as well.

Shame? Really? Oh sorry, I never knew George's of Waco was holy ground or that its food, the crazy wing, was the food of life. Otherwise I would have baptized myself in its ranch years ago. Please forgive me.

Cilantro Ranch at George's if you really need to be baptized!

Maybe communion with a Big O and Crazy Wings for your bread and wine. Your life will be changed!

I love me some crazy wings and Big O's. Soooo good. If you can figure out how to make them, PLEASE don't keep that knowledge to yourself.

Im still a novice, but I did find a product that was acceptable.

I took some chicken breast and cut them into about 1.5x1.5 cubes. Put a slit in the middle that went all the way to create a pocket, and stuffed fit with a piece of Monterrey Jack and a slice of a jalapeño. I volleyball wrapped in in bacon (two slices is best but one would suffice if you stretched it) and then sealed it with a couple of toothpicks.
I thoroughly dusted it with Lawry's and then dropped it in my fryer for 8 minutes (peanut oil).

It turned out well, but next time I will probably;
- use a better seasoning
- find a better ratio of chicken to cheese/veg
- probably just stick with two slices of bacon

Overall, it was tasty but needs refining
