Skewer Ideas

My kids are fairly fickle when it comes to meals, unless it is something grilled on a stick. Pretty much if I skewer it and grill it, they'll eat it. Chicken is easiest of course and we do it at least once a week. Shrimp is easy. For beef I've been all over the cow with different cuts depending on what is out there. Last night I did top blade and it turned out really good.

What would be a good cut of pork (if any) that I can make into skewers and grill?

And the meatloaf thread reminded me that I need to see if the kids will eat kefta.

Any other ideas?

I think any of the leaner cuts would do fine. Tenderloin or loin be grillable/skewerable pretty easily.

Grill the pork chop - then put the skewer through it. Easy peasy lemon squeazy

Next question please

I would imagine you could skewer most meat, or at least get it started however you need to and finish it on a stick.

Chicken is great and you can go many ways with it. Google "Yakitori Recipes' and find one that has flavors that cater to what your kids like. There will be a million to pick from.

Depending on how old they are, let them chop ingredients and assemble the skewers. Kids always love using their hands and creating something.

Also think Brazilian grill. If you haven't been to one or been in a while; just look up a few big restaurants online. Checkout their menus for suggestions. You may have to google specific recipes and techniques. Since they skewer just about everything, it should be great inspiration.

I like to cut pork shoulder into long strips and then weave it back and forth on a skewer. From there you can do just about any flavor and/or sauce. The shoulder meat turns out great and is very forgiving.

So far the biggest hits have been a sort of spin on tandoori chicken - breasts marinated in yogurt and spices overnight; off cuts of sirloin that HEB sometimes has as "steak for skewers" -- simple steak prep, salt, pepper, garlic and oil for a few hours, then brushed with rosemary butter while cooking; another beef with Asian flavors - soy, rice wine vinegar, ginger.

We have a winner.

I think I'll use my rotisserie 6 skewer apparatus and blast it with the horizontal burner and from below.

I did some bacon wrapped salmon bites last night that could be great on a skewer. Cut salmon into cubes and marinade in steak seasoning, brown sugar, bourbon, and scallions for 4-6 hours. Cut bacon strips into 3rds and wrap around each piece of salmon. Use thin sliced bacon. Grill until bacon is done to your liking.

I put individual toothpicks on each one to hold the bacon in place. You could use a skewer instead of toothpicks, but you'd probably need to leave some space between each piece of salmon so the bacon can fully cook. I'm going to try this next time.

Here's a link to the recipe. We use about half the brown sugar and slightly more bourbon. The entire family loves it.

We also love skewers, and I go chicken and pork because beef is too damned expensive for a family my size.

The last two times, they've have boneless pork rib meat. It's already cut into strips, and I cut those into 2 or 3 pieces and they are perfect, and cheaper than chops or loin by a good bit.

Marinade with Hawaiian bbq sauce, (or regular bbq with teriyaki if I can't find that) add peppers, onions and pineapple to the skewer, and everyone loves them.

We are a family of 5, so I look for the weird butcher scraps at HEB when I do beef skewers.

Pork tenderloin is great for kebabs, just don't overcook it. On my grill pork tenderloin kebabs only take 3 minutes per side so it takes more time to prep than cook them.

i do Mediterranean chicken thighs (add onion or whatever you'd like). Then serve with pita, hummus, zhoug, tzatziki, feta, etc. always a hit. Kids usually just eat the chicken, pita, and hummus.

Literally did this exact thing earlier this week. Did chicken, red onion, zucchini and cherry tomatoes for the skewers and the wife made her tzatziki.

Marinade for chicken was lemon juice, olive oil, dried Greek oregano, parsley, and thyme, s&p and some fresh garlic .

Tried this recipe this weekend and we liked it. I did half of my salmon following the recipe and the other half using only teriyaki sauce as the marinade. We liked the teriyaki method better because the recipe marinade is a little salty, especially when including bacon. (Though it's very possible that I didn't get all of the brown sugar to dissolve into the marinade.)

Overall, a great recipe for an app or dinner, especially if people don't generally like salmon.
