1 Package of Bacon
2 pounds of fresh green beans
1/4 Cup of Flour
1/2 White Onion
4 Stalks of Celery
1 Bell Pepper
3 Cloves of Garlic
2 1/2 cups of beef stock
1 1/2 Tsp Cajun Seasoning
1 Tsp Salt & Pepper
- Cut the bacon up and fry it in a Dutch oven. Once the bacon is fried, remove from pot. (Leave the grease)
- Add in the flour slowly. Scrape the bottom of the pan to break up all the small stuck bacon bits. Stir continuously until you get a medium-light colored roux. DO NOT BURN THE ROUX
- Add in your trinity. Cook until al-dente. Do not stop stirring.
- Add in your stock a little at a time. Make sure everything on the bottom of the pot is de-glazed. Stir for a bit to incorporate the stock with the roux.
- Add the cooked bacon and green beans.
- Simmer for 1 hour.
I didn't add the ham or potatoes because I was making it as a side and it was fantastic. I'm sure you could add the ham and potatoes and make a meal out of it.. Let me know what you think......
