I've had some really good creamed spinach lately at a couple of restaurants, and I have an abundance of spinach in my garden…..

Anybody have a good recipe?

All the recipes out there and first response is made with cream of mushroom soup. smfh

I like mine with plenty of garlic sauted with thinly sliced shallot in olive oil until tender. I use my garlic shaver for the garlic, but diced is fine if you don't have one. Splash the pan with around half a cup of good sherry and cook it out. Add in a pint or so of heavy cream and slowly bring to a simmer. When the cream comes to temp, start adding the spinach. A pint of cream is about right for a bag of spinach so adjust accordingly depending on how much you harvest. Bring to a rolling simmer once spinach is added and reduce by about half. Add about 4 oz of fresh grated parm, a dash or two of maggi (or soy). Season with salt, pepper, and fresh grated nutmeg. I'll typically pop it under the broiler until lightly browned for serving

This was top notch! I possessed no sherry, but I did cook off some Chardonnay, and it worked. Thank you, good sir, for another cooking lesson.

I always sautee my onions and garlic first and not just raw onions. Makes a big difference. Also, ANOTHER of French's crispy onions on the last 20 minutes baking.

For quick and easy, I've always been partial to the Stubbs' BBQ Serrano cheese spinach. It's basically eating spinach dip as a side. Whether that is a good or bad thing is in the eye of the beholder.

I like to make the bechamel with whole milk, cream is too rich for me. Prefer to make this recipe as written then grate some parm on top and bake until a cheesy crust forms.

I'm going to ttt this because spinach is about to be planted, and I'm doing some store bought spinach tonight with a fillet.

I'm glad the weather is cooling so I'll have maybe 5 months of homegrown greens coming up.

I always go by what Dr. Jerry Parsons said about planting spinach. If you can walk around your garden three times at 3:00 in the afternoon without breaking a sweat, it's cool enough to plant spinach.
