What do you like to do for days like what we're having in the DFW area?

We love to eat stews/chilis/etc when it is crazy cold outside. I wish we hadn't finished off the last round of gumbo in the freezer.

On Sunday I smoked a pork butt then on Monday I took some of that and made a green chili stew. I'll end up freezing a lot of this tonight or tomorrow.

Yesterday I made birria using Chef John's recipe. In the past I've always taken the extra step (linked in the previous link) to remove the meat, shred it, then add liquid to the stew broth, and made tacos. This is the first time I've stopped at only the stew and can't wait to dig in for lunch.

I'm on a mission to clean out my 3 freezers. Last night was 9/22 dated navy beans topped with unlabeled/undated mystery meat that turned out to be two giant boneless skinless chicken thighs in a homemade Chinese 5 spice. It was great.

Today I'm going home early and making either chili out of ground beef and pulled pork or posole rojo with 2" cubed pork butt. I already bought buttermilk for cornbread and the chili ingredients are already thawed. Chili is likely.

Made a Shepherds Pie last night. Probably going with chili tonight because I'm craving a Fritos chili pie.

I made tacos last night with skillet breakfast potatoes on the side to mix with taco meat as desired. If you haven't tried a good breakfast potato on your taco you are missing out. I love the La Tiara taco shells.

Today was more of a brunch. Bacon, egg and cheese burrito with basil and cracked black pepper sausage gravy on the side to smother. Coffee for the wife. Beer for me.

Not sure about tonight yet. Might pull out the wok and go fried rice.

Chili tomorrow.

Greasy cheese enchiladas or a big pot of Queso.

Damn it, now I've gotta go to the store, cause you've got me craving frito pie now.

We just got back from the store for chili ingredients as well.

Ran to the Kroger near me (because HEB is a mad house), and we're not the only ones. Had a whole display set up with chili ingredients and Fritos on top. Even had a sale on chili meat.

Dammit. I forgot that I bought Fritos (scoops, because they didn't have a bigger bag of the regular that would've had a decent $/weight!) and made corn bread instead.

Then my cornbread was getting toasty on top, pulled completely away from the sides, and turned out of the pan just fine. Raw in the middle.

But the chili is good. As are the edges of the corn bread.

I made a blueberry lemon cornbread in the cast iron last night. Pretty tasty (not to rub salt in the…Fritos).

Lasagna tomorrow. I didn't mention it cuz I don't make it. I buy the Kirkland 2 pack Italian Beef and Sausage Lasagna at Costco. It's excellent and a great deal for 2 3lb packages for about $16.

Edit: I just saw the German Goulash recipe. Definitely going to give that a go. What red wine do you prefer to use?

But I'll also cook gumbo in the middle of July.
