What are your thoughts? What about the 30" vs 25"? We're planning on adding a 25 to our build and I'm wondering if I'll regret not getting the big one.

I almost got one but the wife convinced me to spend our $$$ elsewhere, we are getting a Blaze griddle instead. It's not that much of a cost difference, I'd get the 30. I've already told her next house we are getting the EVO and a Komodo Kamado.

I'd also recommend going with the Evo 30. You may not need that much space all the time but you'll be glad you have it when you do. I sell this kind of equipment for a living and often have customers come back regretting they didn't go with the larger option.

I would recommend the 30 since it's a small price savings to drop down to the smaller one. Better value for the 30 basically.

I bought the 30 a little over a year ago from AggieSam and it's badass. I use it all the time and never once have I wished that I had a smaller one. In fact, if I'm doing smash burgers for a crowd I run out of room. They're expensive but man they're awesome and fun. If you design your kitchen right (AggieSam has a guy that will design it if you buy your appliances from him) then it kind of becomes an art piece that people congregate around. Happens naturally all the time when I'm cooking. Strongly recommend.

Well, it's not just a griddle. It's a grill with a flat surface so it's a lot more versatile. The raised lid allow you to even bake with indirect racks.

Main drivers on price/cost - design, materials (304 ss and seasoned steel), and made in USA.

There's certainly cheaper options but they don't do what this unit does. Plus it's is a great conversation piece and a social cooking experience. Lots of people want to play Benihana.

They are expensive and I agree with AggieSam, but I also have to add that it's NOT STAINLESS STEEL! I cooked throughout my time at A&M (Harvey Washbangers, Koppe Bridge, and Square One) and the worst thing in the world to do was clean the damn stainless steel griddle. We had big ass blocks, lemon juice, special nasty cleaners, etc. and it was a MF to get all the bad stuff off. Took 15-20 minutes. With the evo I put water on it while it's hot and steam the hell out of everything, scrape off all the leftovers then put some oil on it and rub it down really well. Takes about 2 minutes. And I use it all the time because it's easy to clean. I have several friends that have stainless steel griddles but don't use them very often because they don't want to clean it.
