Made arroz con pollo this afternoon. Delicious!
It works great for dried beans (no presoak necessary). Collard greens with either ham hocks or smoked turkey leg is a favorite.

Cornish hens work well in the insta pot. I've also done ribs, cake, and breakfast casserole in mine successfully.

Wife made some white chili recipe the other day in it and it was excellent

But we typically use it for pork Chili verde

It's funny because I made the Serious Eats recipe once at work, then decided I need an instant pot so I can make it at home, a year later and that and rice are the only things I've ever used it for.

Instant Pot is the only way to go for all types of dried beans. Also brown rice, which would never turn out right when doing it on the stove.

I've had good luck with many recipes on this website. Favorites are beef stroganoff, short ribs, pork chops, chicken cacciatore and some decent and easy pulled pork.

Goat Curry In-A-Hurry

I've done this with bone-in goat leg and a neck roast. The neck roast tasted the same but had more small bones to contend with.

I also make beef bone broth and chicken broth with it. If you want to make a large amount of chicken salad you can throw in a frozen whole chicken or thighs (whatever you want) and it will cook them fully for shredding.

This is as close as I have ever come to making restaurant Mexican rice. Super easy and much better than the"packets". Family loves it and it is quick.

Just dusted off the Instapot last weekend when I was too late to slow cook a pork shoulder (and it is too f'ing hot to smoke). Knocked it out in about 90 minutes.

Popcorn but you need the special top to make it really work. Couple of tablespoons of coconut oil. Let it melt. Add half a cup of popcorn. Stand back until they stop popping.

I wonder if you could do popcorn under pressure, and then do the rapid pressure release to get it all to pop at once. Might be a little dangerous.

You try it first!

That top has a steam release. Every time a kernel pops, a small cloud of steam shoots through the small hole in the tempered glass. I think you need that to make it work.

It's worth it. Movie style popcorn

Making the chili verde tonight! Question - do you do a natural release after cooking at high pressure for 15 minutes, or just do an immediate release? The recipe seems to indicate an immediate release, however I was curious how you/anyone else approached.

You open the vent after the time listed, it's not a natural release.

I'm guessing that since the pork works, similar dishes like chile colorado and ropa vieja would work also? And curries?

Seems like I need to do some experimenting.

When I have the time, I still like the old school slow methods. I did braised short ribs yesterday, slow and steady in the cast iron dutch oven for 3 hours. Dominated.
