Has anyone successfully recreated these at home?

My wife loves the avocado and I like the jalapenos. We tried the recipe that comes up on google, but it didn't turn out great. Would love to hear some tips/tricks if anyone out there know of any!

Would be helpful if you could elaborate on what you mean by "didn't turn out great". Filling, crust, other?

The most challenging part is getting enough of a cheese layer around the avocado. Is there a good method? The online recipe says to press grated cheese into the avocado but that didn't result in a good cheesy finished product.

I do have a couple of thoughts...

There are some videos out there of people rolling mozzarella flat into a sheet to make rollups. Basically melt a ball of mozzarella down to soften and then use a rolling pin to flatten it out into a thin sheet. Maybe wrapping an avocado or jalapenos in a thin sheet of cheese will result in a more consistent cheesiness.

HEB also sells Crystal Farms Low Moisture Part-Skim Mozzarella Cheese Wraps. Haven't seen them in person but could have potential.
