Bob Style or Country Style?

What's your chicken fried steak style of choice?

Followed the Serious Eats CFS recipe: https://www.seriouseats.com/chicken-fried-steak-recipe

And sorta followed the queso part of the Bob Armstrong Dip from here: https://www.homesicktexan.com/2014/01/bob-armstrong-dip-queso-recipe.html

Gravy is leftover sausage gravy from breakfast this weekend with the sausage strained out.

I like it every way mentioned, but considering I had Matt's cater my wedding I guess that means I prefer it Bob Style, we also served Bob Armstrong Dip, and all the other good stuff. Sounds backwards, but til this day, friends and family say we had the best wedding food. If you've never had a CFS BOB style, don't knock it til you try it!

both of those look terrific, but if forced to choose, gravy is the obvious winner.

SMOKED Bob Style (with brisket instead of taco meat). Sadly Matt's no longer offers this option.

I don't want queso, rice, and beans with CFS, I want mashed potatoes. I'd just add either a bunch of black pepper or Tony's to the CFS and mashed potatoes.

Dang it, now I'm hungry.

Either one, but nix the avacado and sour cream on the Bob style.

But if forced to make an either/or choice - traditional gravy would likely win out for me.

At the end of the day, it appears you got the important part right. The damn Chicken Fried Steak

There is so much bad CFS out there I almost never order it. I live around the corner from the Gristmill and everyone that comes into town to visit us wants to go eat their bland, chewy meat topped with packaged gravy craptastic version. Sadly that seems to have become the bar for most restaurants

Yes, I was very pleased with how the CFS itself turned out. The crust was flavorful, adhered very well, and super crispy. I used a combination of a blade style tenderizer and a regular old meat mallet to get it thin and It was tender but not like a hamburger like Matt's can be at times.

And I did gravy, but not ruling out queso in the future

I'm homestick for CFS and decided this thursday I am going to make it for the first time myself. Any tips on how to ensure it turns out great? For those that have had both, preference of Homesick Texan recipe vs Kenji?

I'll be doing a cream gravy regardless, with mashed potatoes and maybe a jalapeno creamed corn

The Homesick Texan is the last place I'd go for any Texas recipe. Her recipes always seem like what people outside of Texas think Texas food is like. Go look up her chili recipe for example. Not even close to Texas Chili.

Kenji's recipe looks good. I like his suggestion for meat. I almost never use bland round steak for CFS instead I typically use strip loin or tri-tip. Grady Spears recipe is probably closer to what I do
