I am sure it was a mistake.

What would you do with multiple pounds of shredded chicken meat?

They are going to be frozen in meal sized containers.

And yes. Stock is being made



But I am looking for something different and new. Chicken and dumplings, chicken pot pie, chicken salad, and bbq shredded chicken baked potatoes get made regularly.

Usually make this with uncooked chicken..but you could probably do this with cold cooked chicken and just cook shorter.

Buffalo crack chicken

So take the chicken off the bone and throw it in a crock pot. Throw in some cream cheese and some Frank's hot sauce. Usually cook a few hours with uncooked chicken so just cook until it's all one big hot mess and the chicken shreds easily.

Keto friendly. I like to take the cold leftovers and fry them into patties with some butter in a nonstick skillet. Adds a nice little bit of crust.

Enchiladas and quesadillas are my favorite two. You can make an amazing quesadilla with tortillas, cheese, a little diced onion, and some chicken. I always have jalapeos and some cilantro as well to go with a dipping hot sauce or pick/salsa.

Whenever I smoke chickens, I pull the meat and freeze it. I like to use the chicken to make chicken salad (served on a croissant), chicken pasta with pesto and lots of parmigiano cheese or green chile mac and cheese with chicken (and maybe add bacon) or bbq chicken pizza (use bbq sauce instead of tomato sauce and add red onions, jalapenos and cilantro).

Cooked egg noodles
4 tbs melted butter, add 1/2 cup heavy whipping cream, 1/2 cup grated parmigiana or romano cheese, garlic salt, pepper and Italian seasoning to taste.
Put noodles on plate
Put chicken on top of noodles
Ladle sauce on top of it all.
Eat

Look up a reciepe for Caldo Tlalpeno, it is a common Mexican soup, like a part of real Mexican comfort food. I highly recommend it above tortilla or chicken caldo.

Use your stock and some of the chicken to make thanksgiving cornbread dressing with chicken and Jimmy Dean sage sausage.

Freezes great, reheats/cooks from frozen great and you'll have one dish already made and frozen for thanksgiving.
