Do any of y'all cook beets for a side?? I grew up eating the pickled kind out of the jar but have never messed with a whole uncooked one.

Thinking it may be fun to try and will add something different as a side dish.

All the time. You can steam them, or roast them wrapped in foil with a splash of water. Often I just give them a little olive oil and salt and call it a day.

Was never really a fan of beets. My wife loves them.

She cooks them in the various methods mentioned in this thread. Her most common is probably cubing them, oil and seasoning, and roasting.

I love them now.

I grew up on quick pickled beets straight from our garden. The never made it to canning because I'd eat a bowl full. My favorite meal was always liver (calf) n onions, mashed potatoes and pickled beets. *drool*

Beets pickled with thinly sliced red onion are awesome. I like the onions as much as I like the beets.

Hated beets growing up because it was always out of the can.

However, give me a golden beet salad with goat cheese and walnuts and evo and I would eat it every meal.

Man, so many foods I grew up choking down and hating but now that we know how to cook, my eyes are open.

Most obvious that comes to mind is squash. My mom would boil the crap out of it. Couldn't stand it.
