Have been makin' bacon from slabs cut from the shoulder roast, then saving the bone-in remnant for BBQ or crockpot cooking.

To bring some sanity back, how long does it take to thaw a 7-9# pork butt in the fridge? I'm thinking of buying a couple to put in the freezer.

2-3 days. Figure 24 hours minimum per 5 lbs.

these are cryovac sealed simply submerge in water and couple of hours tops

not sure where to put this but the Costco near Greenway Plaza in H-tine has prime briskets for $2.99/lb. a decent discount when talking about 10+ lbs of meat at one time.
