Glad to help out, sorry that part of it wasn't worth a damn. Wonder if that has anything to do with how they are separated (in theory, these should have been two halves of the same whole).
They also take a lot more time than one might think (at least in my limited experience). Yours finished much like mine did (almost more of a pork look than beef). Did you have any luck with getting a good bark to develop? I had some trouble but attributed it to a change in rub / shaker and uneven application.
