I enjoyed my homemade pickles so much last year that I'm going to make them again this year (assuming my dill hasn't drowned in the crazy rain we have had).

Quote:

2 parts water to 1 part vinegar
1 to 1-1/2 tblsp salt (per quart)
Fresh dill (several pieces, about as long as the jar...leafy stuff included)
Garlic (clove, minced, dried)..I use about 3/4 teaspoon per jar, or a partial clove
A few black peppercorns if you wish
Coriander seeds also a nice touch

From earlier, mine is identical except I use mustard seeds instead of coriander.

I also throw in a few slices of jalapeno from the garden on occasion to give them a little kick. Just two slices of a medium spicy jalapeo and it gave them just the right amount.
