Anyone have a good pimento cheese recipe?

I have a simple one that is really good, but I don't ever measure, here is my best estimate:

Grate one small block of sharp cheddar, 8-10 oz
2-3 oz cream cheese
2-3 T mayo
One large clove Garlic
One teaspoon Dijon mustard
Salt and pepper
Pimentos

Add chipotles peppers or a chopped fresh jalapeo for a twist

I slowly add the mayo until I get the right consistency.

this makes a 'drier' pimento spread which I prefer:

2 tsp of pimento

pinch of cayenne
pinch of season salt

for double recipe

Here's another from Noble Pig in Austin:

1 lb. sharp cheddar cheese
2 roasted red bell peppers
cups mayo
1 head roasted garlic
1 tsp Worcestershire sauce
2 tsp sriracha
2 oz green onion
tsp black pepper
1 tsp paprika
1 tsp salt
1 tsp apple cider vinegar
Roast bell peppers then peel, seed and grind them in a food processor. Roast the garlic in an oven at 350 degrees for one hour until tender and sweet. Set the garlic aside to cool. Remove the root and slice the green onions thin all through the green and white parts of the onions. Grate your cheddar cheese and squeeze out the cooled roasted garlic. Add all of the ingredients to the bowl of a stand mixer, use the paddle attachment and mix together the pimento spread on low speed for 3 minutes.
Served here on Noble Pig wheat bread with house-made bacon, smoked green onions, romaine, and olive oil pickles.

Not a recipe but store bought - Blue Moose Tex-Mex Smoke Gouda Spread. You can find it at Costco in Plano/Allen.

Jeebus that stuff is good on anything, including a spoon.

I us equal parts grated Kraft Deluxe American (or Boars head) and Tilamook medium cheddar plus whatever cheese is in the cheese drawer at the time. Mix that with well roasted chopped red pepper, Hellman's mayo, salt, pepper, a little Coleman's mustard powder, and a dash of Worcestershire. Sometimes I'll add dill and usually omit the woo when I do

This is what my mom made and I grew up eating. Guess I just trained my pallette to accept that abs I don't like typical pimento cheese now. Oh well.

My grandmother made it with grated cheddar, Miracle Whip and a jar of pimentos. The ratio of each of the ingredients was something that you learned by feel.

I still use my grandmother's recipe, but add a jalapeo (she would understand).

I am not sure if I understand the fancy recipes above.

The stuff by the pound at central market is great to me. Have never bothered looking at the ingredients, but it's my favorite pimento cheese so far. I've only tried a handful of different recipes.

Just buy this stuff at Costco and be done with it. Spend your culinary energy on something that can be perfected. This is perfect already.

If you eat Miracle Whip, you wouldn't appreciate them anyways
so much this. Miracle Whip is trash in every way. either eat real mayo or don't eat it at all.

Jeez, lighten up. Everybody has their own taste. I personally don't care for it, but I'm not gonna get worked up about people that do like it.
