Look up Benton's Old Fashioned from PDT. It utilizes maple syrup as the sweetener and bacon infused bourbon. Seems like a perfect match.

You can do it with regular syrup and bacon, but it is better if you use the ones in the recipe. Instead of 4 Roses Yellow, I prefer Willet Pot Still.

a little lime


Got that from a whiskey bar in Columbus, OH about 4years ago... great drink.

1 1/2 parts Knob Creek
1/2 part maple syrup
1/2 part lime juice
a splash of ginger beer
over ice with a lime wheel

3.5oz of ale and whiskey with to 2 teaspoons of maple syrup....isn't comparable to that stuff (absolute crap) that is crown maple....

Seems like it'd be good to have something not sweet to pair so it is a bit of a contrast. I'd vote beer also or a non-sweet cocktail.

    there's a beer for this..... its balast point's calm before the storm. that would be your ale you asked for but with the coffee and cream your breakfast is missing. also it is delicious. much like chicken and waffles.

    Mimosas, duh! Sparkling + not overly sweet (because you put looots of really dry champagne in it and like a drop of orange juice). It'll help cut the fattiness and sweetness.

    Edit: Or Founder's Breakfast stout if you like taking naps afterward.
