I thought the OP was for favorite BBQ Sauce thread.

Oh, and Head Country is my fav sauce. Not too goopy or sweet. Easy to spread on ribs or chicken while grilling.

The rendered fat coming from the meat as you bite into it.

My favorite is at Railhead Smokehouse in Fort Worth. No clue what's in it but it destroys any other sauce I've ever had. I actually managed the "new" Koppe Bridge in college and had a guy that worked for me who was the nephew of the owner at Railhead. He said only the owner and the pitmaster (he's dead now) knew the recipe to the sauce and would go into the walk-in to make it.

I like Stubb's Pecan. It's great in homemade grilled burgers. A little sweet, but good stuff. But, for the most part, I'm in the mold that it's not done right if it needs sauce.

I make my own, it's a play off of what Aaron Franklin does in his video:

Some Butter or Olive Oil to sautee onions and then sautee minced garlic
A cup of ketchup
3/4 cup of Apple Cider Vinegar
salt & pepper
brown sugar
crushed red pepper
lemon/lime juice
I also like to throw in a few dashes of franks red hot or tabasco

I mix it all up, let it boil for a few minutes then strain it to get the solids out

Try Herbert's. I've only been able to find it in the HEB in Brenham but it's good stuff.
