The mac n cheese recipe from Modernist Cuisine is also on their website. The only difference is the ratio of cheese to water.

That would have to be served with a defibrillator on the side.

Try asking for "chile con queso". You might have a better chance of the waiter knowing what you mean than if you just ask for "queso" (which is just Spanish for cheese).

I was thinking of doing something like a couple of chopped romas (deseeded/pulped), some chopped red onion, thinly sliced serranos, a little cilantro and pepper jack with something like bud light to creat the sauce.

rather than bud light, use dos equis (or even shiner bock) or something similar that has a bit more flavor. that's my thought anyway.

The lack of flavor is my intent with the bud light. I think we sometimes get caught up adding too many ingredients to things. Simple can be awesome.

i guess my point is that you might as well add water if you're going with bud light.

You're probably right but the directions said to make it with beer so I picked a water like beer.

i made the queso dip (guinness & jalapeno jack) tonight and tested it out on family. everyone liked it but suggested a few things. i would hold back the last eighth of a cup of liquid just in case and go with a 50/50 split of beer & water. throw in some crumbled sausage, tomatoes, and whatever else you want. cubed avocado would have gone well i think.

One thing to remember is that the amount of sodium citrate is dependent on the cheese, not the liquid.

Just saw this. I've walked past that place about a million times but have never set foot in there, even though it appears to be exactly like every other hole-in-the-wall Tex Mex place back home. Now I'll have to try it.

The queso fundido I had was from Tequila's, which unfortunately was the best part of the meal- everything else was very mediocre and WAY overpriced.
