Where do you find natural sausage casings to buy? I can't seem to find them anywhere.

i would try a traditional butcher or one of those mexican meat markets

if youre in houston The Meat Market with the big COw as their sign off SHepherd has them.

If you in Houston:

Allied Kenco Sales

Its a wounderland of encased meat production.

If not, get in yiur car and drive to Houston and go to Allied Kenco Sales.




Also HEB has salted casinngs, just ast the butcher. They are not great, but theyll work.

I think most casings are preserved in salt.

HEB sells these (I think) and we have used them on occasion:

Depending on where you are, we generally get ours from LaCoste. It also depends on how much sausage you are going to make.

I get mine from a Butcher supply shop. What town are you located in? Are you looking for natural casings or the collagen ones?

If you aren't making a big batch, Whole Foods sells them, and I've had good luck with them.

Yes, all casings arw preserved with salt. The ones that HEB often has are packed, dry in salt.


The ones Kenco or other suppliers are packed in salted water (my preferance). They tend to be more tender with less discoloration.
