Done with Beans in Chili. Anyone Wanna Tackle Migas?

Haha, doesn't make it right. Just like ordering smoked brisket BBQ in North Carolina, well you kinda get brisket and you kinda get BBQ, but it ain't nothing like what you would be getting in Texas. Notice that several of those menu descriptions say "con huevo". I will bet you Peso's to donuts that means accompanied with eggs. It is very typical to have eggs served ON TOP of or on THE SIDE of chilaquiles, but not mixed in. Last Thursday in Linares, Nuevo Leon, Mexico I had just that for breakfast, eggs with a side of chilaquiles.

Heck, I have even seen Menudo served with Lemons and have canned yellow corn in it. Is it Menudo? Yes. Is it traditional and made correctly? No.

As I have been saying Chilaquiles are Mexican food, Migas are Tex-Mex and rarely is anything truly Mexican served in its original Mexican form in Tex-Mex resturants.

I will give you another example of a Mexican dish gone wrong or modified: Huevos Rancheros. In most places in Texas or the U.S. if you order these it is fried or over easy/medium eggs covered in a Ranchero salsa. If you order these in Mexico they will be served like the previous, but on two fried corn tortillas. If you want them the traditional Mexican way in Texas you usually have to ask for them that way.

You and BMX made the same comment, however, in every example I posted the eggs and tortillas are mixed together including the ones that say Chilaquiles con Huevo. The same goes for all the places I couldn't find menus for

I had breakfast at Blanco Cafe yesterday and thought of this thread.

And for the record, I will take tex-mex over traditional mexican any day of the week.

Just don't put beans in chili, its gross.

That may be, but it still doesn't mean it is right. Let me give you a comparison, in Mexico and in Latin America they have adopted eating Turkey at holiday times such as Thanksgiving and Christmas, but good lord their attempt at stuffing varies from odd to disgusting to humorous. I have seen turkeys stuffed with picadillo as well as with polenta with raisings and chopped fruit not to mention the oddest one a mix of breadcrumbs, carrots, chayote, and a couple of other UFO things.

No American would be inclined or impressed to eat a Christmas turkey stuffed with picadillo, know what I mean? Equally, no Mexican would be inclined to eat chilaquiles mixed with scrambled eggs and or bits of pepper, tomatoes, and onions as one of your entries implies. Just because "they" call it chililaquiles does not mean it is truly chilaquiles.

FYI, for the poster that mentioned the difference between Tex-Mex and Mexican food, I agree. I was raised on true Mexican food, but wow some Tex-Mex stuff is just excellent eats, extremely good. True Tex-Mex enchiladas beat almost any Mexican enchilada going away.

A riddle for you

In Mexico it is usually made with Corn masa. in the US, it is usually a round flour bread. In Spain it is something absolutely and completely different that resembles a frittata.

I'd eat them all and yet call them same thing.

There are several restaurants here in Pittsburgh that sell Texas Chili with beans in it. Texas Chili, therefore, must have plenty of beans in it.

I wonder if they can be used to make chilaquiles?

Just like Spanish migas, which are in no way close to being what Texas migas are.

And much to the horror of many folks I love my chili with beans in it.

The only time I ever had chilaquiles was while I was in Puebla for a graduation.

I had 3 servings and crave them badly now at random times.

How do they make King Ranch Chicken in Mexico? With Doritos or Tostitos?

Chilaquiles with eggs mixed in are about as traditional as Taco Bell.
