What are your thoughts on using up the Weller 107/12 to make poor man's pappy's? We cracked our bottle of Weller 12 and it just didn't do it for my wife (she liked the nose and flavor, but felt like it was watered down). I actually agreed with her, which is weird because I've had multiple pours and didn't remember it being so thin.

It could be that your palate is demanding more robustness and flavor. Not sure where you are at on your bourbon journey, but if you compare that 12 year to other 8-12 year bourbons, it's going to miss the mark. (Especially as a light wheater at 90Proof)

In my opinion, the following options are "better":

Wild Turkey 12 year
Elijah Craig Barrel Proof
Little Book/Bookers
Stagg
KC9-120P
KC12

This is the truth, she prefers the full proof bottles (her sweet spot is the 115-125 proof), I'm good with that too, but I feel my preference is the 100-110 range.

Her favorite bottle currently is the RC Spanish Oak. I still need to pick up my bottle from your barrel pick lol. It's a good hour or so drive, so hopefully I can make some arrangements to get it soon.
