Overall, felt like I got a lot done over the weekend.
This will let me start running electrical, building benches, getting toolboxes in place, etc, and then I can build the wall to the left. Really opens up my options for next steps.
I scored a pretty nice stockpile of laminate countertop material from a local burger joint to use as a benchtop surface. I'm debating leaving as is vs painting. I've seen some encouraging results from people who painted laminate (with the right product) and it seemed to hold up, but I worry about it looking like crap long term. I'd welcome input from anyone who has painted a laminate top.
I prefer a 30" working depth for a bench, and these are 36", so this is a lot easier than trying to glue laminate sheets to a custom surface or dealing with 24" stock.

Dude. That's a sweet score. I'd leave as is. Rip to 30" and you have some real unique work surfaces. Maybe just edge trim with poplar and call it a day.

Leave it as is. That'll look awesome long term and way more fun and unique than painting.
My eyes are not what they used to be and a busy bench background would make finding that small screw or bolt take a little bit longer. But I'd leave the bench top as is because it looks neat then deal with painting later if it becomes an issue.
Friends of my aunt got scrap wood from an old bowling alley. The lanes were redone as countertops. Some other wood went into trim. It was an eclectic house to begin with but the random marks, graffiti, etching etc looked pretty cool.

Yeah… thinking it over, I'll definitely live with it for a while, but my worry was small parts like Tea Party mentioned. I can always come back and paint later.

I can't find small stuff on my plywood covered workbench, but that's mostly because I have so much crap on it.

Got a lot of little things done over the past week leading up to today. Got an antenna mounted and wired into the TV locations. Bought a scaffold set and assembled it. Moved tools around several times to put things in place.
Got a couple TVs set up so I can watch college football while I work. Cooking with gas now!
Made a lot of progress today getting plywood installed on the wall. Definitely feeling my age tonight and will sleep well. It was tricky putting up the top layer until I got into a rhythm
Next step is rough-in electrical and then painting the plywood. I know a lot of people would probably just leave it as it. But I like how white makes it brighter and I want to.
Here's the conditioned space - starting to be very usable. Kids absolutely love it out here. Billiards, Ping Pong, Foosball, and a Switch set-up:

I borrowed a method someone used on another wall. There aren't as many ties in that early pic, but I used a Ramset powder gun to fast a scrap piece of lumber to the steel with a pin (Link). Every stud is tied at some elevation, and some are tied at multiple elevations. I waited until I had the frame mostly erected so that I could true/square it up as I tied it into various elevations.
I also bolted a piece of lumber to the 2 columns and there's an additional top plate that goes over the columns that isn't shown in what you quoted. Eventually there will be a stud wall on the left as well.
