Ok, so it's a replacement. Last one had two switches, one for the light and one of fan. I followed the instructions and hooked the white to white, blue and black to black, and green to green. Turned it on, and one switched controlled both light and fan. There was an extra red wire. If I had attached the blue to the red, would the 2 switches work?

In most fans there should be 4 wires. Ground, white, black and usually a black white striped or similar. The two black ones are the power to the fan and light respectively. So your red wire would go to one of those and the black wire from the switch would go to the other. That separates the light and fan.

If you only had three wires in the fan it might be a cheaper unit where they are not separate, but I would think that is not common. Some units with built in remotes also only had three, as the remote allowed separation of the fan and light.

Have any pictures of what came out of the fan?

There's black, blue, white and red.

Instructions called for black and blue to go to black, white to white, and green to green. I think I figured it out, but need to test it. Black to black, blue to red (the light switch isn't working and the blue is for the light.

The extra red coming out of your ceiling is a constant hot. This will seperate the fan and the light. Tie the blue to the red and that should do it.

White to white
Green to green
Everything else to black

I learned this through process of elimination on my first install in an older house.
