Howdy! We're Brett '85 & Sandra '84 Smith, proud owners of Varsity Grillhouse - Aggieland's newest tradition for great food! Together with our family - Hudson '21 and Ashley '21 Smith, and Taylor '15 Davis, we've dreamed of opening a restaurant in College Station. Our family has been involved in the restaurant business for over 40 years in Brenham, and after Brett and Sandra relocated to College Station 6 years ago, we're blessed and proud to finally open the doors at our newest venture - Varsity Grillhouse.

This establishment closed after less than a year of operating. The owners notified the employees on the day of the closing without giving opportunity for them to find work. Quite awful!

It's a tough business. Many of us worked in the service industry to get thru school have experienced similar. The good news is that there are usually other places hiring and happy to hire someone new who has a little experience.

Sad. As a former restaurant owner, I can honestly say that shutting one down is an incredibly difficult decision. You will never appreciate the hard work and enormous investment the Owner's have poured into that establishment (most likely millions). I pray they can sell the building or lease it out and quickly recover from their loss. I feel for the employees, as I am sure the Owners do also. It isn't right to cast dispersions on them regardless of how you may feel.

That's usually what happens in restaurant business. There is no easy way to close your doors.
Good news for the employees it shouldn't be too hard to find another job in the restaurant / server industry in this town.

They had the courage to open the business knowing the success rate in the restaurant industry. I appreciate the owners here much more so than the workers. Sure workers lost a job (which isn't hard to find another) and the owners lost a lot more.

High dollar facility on high dollar land equals high risk. With these things in mind I wonder about Coopers. Takes a lot of revenue just to cover city taxes, insurance, utilities. staffing and other overhead items. I've only been there twice for lunch; not many customers either time. I'm not suggesting anything...Just wondering...

I was there twice, my first and my last. They wanted too much for a lean cuisine.
