Has to be either the '99 bonfire game for the emotional and symbolic significance or the '40 Sugar Bowl national championship game* for the tangible significance. Anything else and you're doing it wrong.
*I know that national championships were awarded before the bowl games back then, but that was a stupid way to do it and IMO delegitimizes the championship. To me, you have to cap off the championship with the bowl win.

The Big XII title victory was an awesome game. It's just sad that winning that title didn't seem to propel A&M in any way.

Gots to be '99 with the playing on the field by both the Aggie football team and the Longhorn band.
Any win against the sips was usually a big game.
The 75 game was the first time we had won since the 67 season.
This game was at Kyle and place was going crazy. It might have been on national TV, but not sure of that.
However, the next SI edition had Bubba Bean on the cover.

That should hold us for the next 73 years.
In support of OP there's nothing wrong with that being the #1 game. Even though we didn't win a conference championship out of it Alabama went on to win the NC. It was also done in a hostile environment. There's as strong an argument for that being the number one game as any.
