And how do you know it's not a case of wrapping the trees, as in the act is the tradition, versus wrapping those trees, as in the trees themselves are specifically the tradition?

This. They roll pretty much everything within a 1 or 2 block radius of Toomer's Corner. The corner oaks were important, but the tradition is rolling the whole intersection.
